My mother always bought huge boxes of pancakes from Sam's club when we were growing up. It was nice to be able to have a hot breakfast without all of the preparation and clean-up that goes along with it.
It's so important to me to know that while I am recuperating and gaining my strength back, my sweet little family will still be well fed and taken care of! I've never been one for convenience foods like frozen pizzas, tv dinners, bagged dinners, etc. But, after previous births this is what we relied on for awhile.
If I put in the hard work now, my family's diet won't be compromised at all! As I feed my freezer this coming month I will be updating about my progress.

It definitely helps having that type of food in the freezer for recovering time or those nights where one doesn't feel like cooking.
Good luck getting the whole quad batch in the freezer!! If I were to do that at my house, my family would eat half of them before they even made it to the freezer! LOL
I usually make up a triple batch of pancakes a couple times during the week and the leftovers get put in the freezer for later use. I also quick freeze them on a cookie sheet with wax paper first and then stick them in one big gallon freezer bag(mostly because I have several who think that 3 pancakes wouldn't be enough!)
Freezing pancakes is a great idea. You know what else freezes well? French Toast! You can make about 8 at a time on a greased cookie sheet in the oven. Then they can just be popped into the toaster right from the freezer.

Ooooh, french toast is a fabulous idea! we have TONS of extra eggs around here these days. The chickens are laying about 16 a day, so this would be a great way to use some up!
