Freezer Breakfasts

A tree fell on our electric fence sometime this morning, and our pig got out. After spending over an hour trying to round up the pig, get the goats milked on a broken milk stand (the pig broke it), and chasing a rooster around with an ax, Ryan got home from work and the pig walked calmly into her fence. I still had a baby to nurse and three boys to get dressed, and breakfast to fix. We don't keep convenience foods in the house seeing as they are not convenient for our health. The idea of cooking breakfast did not appeal to me at all, but I have a family (army) to feed. I remembered that I still had a bag of pancakes in the freezer from when I made up a few batches before Clara was born. I threw them in the oven and we all sat down to a nice hot breakfast.

Most of the time when you think of freezer meals, you are thinking DINNER. I am going to invest a bit of time this week to get some breakfasts and lunches in the freezer as well. We all have those mornings, or noons that don't go according to plan. But, like death and taxes, meals are another constant of life. They will always need to be fixed, even when the pig escapes. Planning ahead with freezer meals is a great way to alleviate a portion of the stress that comes along with unavoidable circumstances.

I am going to try to keep two bags of pancakes, and two breakfast casseroles in the freezer for times like this.

That's funny about the pig, although I'm sure it wasn't so funny at the time! I'm glad she went back.
One thing I like to make and freeze is French toast. I just make up a recipe the same as I would for the stovetop, except I cook six or eight slices on a cookie sheet in the oven--350 degrees, 7 minutes one one side and 3 on the other. Then I freeze them up. If you use a rectangular cake pan for your egg/milk/cinnamon and sugar mix (with a dash of vanilla), you can soak about six pieces at a time!

WELL! That sounds like an exhausting morning! I like the idea of whipping up breakfast for the week ahead of time. I'll have to try it!

that is a great idea. I keep meaning to do it myself but it never pans out (usually I don't have enough ingredients to make more then one batch). and I never plan ahead I only think of it as I am cooking or when I have nothing for breakfast.

I also want to say that I LOVE the name Clara. We just had a baby girl 6 weeks ago and that was my choice for a name but hubby thought it too old fashioned...so we named her Emma!LOL

Freezer breakfasts truly are the best, and save sooo much time in the morning! About every 2 weeks, I make quadruple batches of pancakes and blueberry muffins. A muffin or a couple of pancakes with one of our breakfast shakes (frozen berries,raw milk, raw egg yolks, and maple syrup) make a tasty and nutrious meal that my kids and I love! There's no real cooking and very little clean up.
